Anchoïade # Anchovy Tapenade

Anchovy Tapenade

100 g black olives, pitted
100 g capers
100 g tuna
12 anchovies, washed, in strips
2 cups olive oil
1 teaspoon mustard
1 sprig basil
3 cloves garlic
thyme & laurel
salt & pepper

Grind together in a mortar the olives, capers, anchovies, tuna and garlic. Add mustard, herbs, spices and olive oil, and beat thouroughly until you have a smooth paste. Serves 4.
